Alabama Style Twisted Spareribs

  • 2 racks Smithfield® Pork Spareribs
  • 1 (12-oz.) can Twisted Tea® Half & Half Hard Iced Tea
  • 1.25 cups mayonnaise
  • 3 tablespoons garlic pepper seasoning blend, divided
  • 1 teaspoon horseradish (optional)
  • Smoked paprika
  • 1 handful peach or apple wood chips for smoking, soaked in water and drained (optional)


  1. Pour can of tea into medium saucepan. Bring to a boil over high heat; boil until reduced by half, about 8 minutes. Pour reduced tea into bowl and place in freezer to cool.
  2. Whisk mayonnaise, 2 teaspoons garlic pepper, and horseradish into tea. Cover and refrigerate.
  3. Heat grill/smoker for indirect cooking at 275°. Add wood for smoking, if using. Season ribs with smoked paprika and remaining garlic pepper. Add salt if not in garlic pepper.
  4. Place ribs, meaty side up, on grill/smoker; cook for 3 to 4 hours, until very tender. Slather with Twisted Alabama sauce every 30 minutes.
